Create a new consistent sample codebase for Elysia + Speakeasy integration, based on the Train Travel API which gives a far more realistic domain and usage of features than the simple user examples before.
Sadly it's still on OpenAPI v3.0 as Elysia does not support v3.1 (yet elysiajs/elysia-openapi#343)whilst waiting for merge Elysia now supports OpenAPI v3.1! We also bump to latest versions of the packages used.Guide to match this sample code: speakeasy-api/developer-docs#102
