Improved the UX of the ops/monitoring/swap-ssd-health.sh script by adding colorized output and robust error handling for missing commands. This makes the script usable on non-macOS systems without crashing and improves the readability of the output.

PR created automatically by Jules for task 4966889222105941804 started by @simien

- Added ANSI colors for better readability (Green/Yellow/Red).
- Added `command -v` checks to gracefully handle missing commands on non-macOS systems.
- Improved logging mechanism to support colored console output and plain log files.
- Added fallback for log directory creation.
- Added journal entry for CLI UX learning.
