docs: update Atomic Red Team extension for three-step workflow#175

The extension was refactored from a single Run Tests action to a three-step Prepare/Run/Cleanup workflow with Linux and macOS support. Updates the docs to reflect the new workflow, supported platforms, webhook events, and Defender exclusion behavior. Old screenshots removed (need replacement for the new 3-view UI).
