- Rename Swift package, executable target, and test suite to OpenEdCore
- Relocate Sources/StudentAppBackend to Sources/OpenEdCore
- Relocate Tests/StudentAppBackendTests to Tests/OpenEdCoreTests
- Update Dockerfile, docker-compose, and GitHub Actions workflow references
- Verify swift build and test suite (146 tests passing)
