docs: drop the 1.0 wording and the release workflow for now

What and why

The version stays 0.0.7 until a release is planned, so this removes the parts of #433 that announced or automated a 1.0 release. The version ranges (Angular peers >=12.2.0 <23.0.0, Node >=22.12.0) stay.

• Changelog: the ## 1.0.0 section is now ## Unreleased, and its wording no longer names 1.0.
• Docs:
  • The tools page heading "Names before 1.0" is now "Renamed tools" (scripts/e2e-mcp.mjs matches the new heading).
  • The security page now says "Version 0.0.7 and earlier".
  • The "Releasing" section is removed from the publishing guide.
• SECURITY.md: back to the early-development supported-versions text.
• Code comments and test names: these say "after 0.0.7" instead of "1.0".
• Release workflow: .github/workflows/release.yml and scripts/release-notes.mjs are removed until publishing is set up again.
