With minitest 6.x, minitest-mock is a separate gem. Ensure version 6 is used, and include minitest-mock in the bundle.

Rubyzip is now on the 3.x series. This change allows use of that version with openxml-package. It also fixes an unrelated build failure due to changes in minitest.
