Updates OpenVINO/GenAI dependency pins to the latest nightly builds so OVMS builds and demos consume a newer runtime/tooling snapshot.

versions.mk). - Updated GenAI binary package URLs for Ubuntu 22/24, RHEL8, and Windows to the
2026.2.0.0.dev20260511nightly (versions.mk). - Updated demo export-model Python requirements to use
