Reverts the @aws-sdk/client-s3 version back to ^3.859.0 (from ^3.1014.0) in package.json and regenerates package-lock.json accordingly.

The lockfile update rolls back many AWS SDK/Smithy transitive packages, adds uuid/@types/uuid as nested deps, and adjusts several AWS-related engines.node requirements from >=20 to >=18.
