docs: list all server adapters in the high-level architecture section - #368

The architecture section named only @seamless-auth/express as the server adapter, while the Start here diagram and seamless-auth-server ship Express, Fastify, and Next.js adapters. List all three so the section matches the published packages.

Summary
The README's "High-level architecture" section named only
@seamless-auth/expressas the server adapter. It now lists@seamless-auth/express,@seamless-auth/fastify, and@seamless-auth/nextjs(App Router), matching the Start here section andseamless-auth-servermain (packages/, all published). The cookie-to-bearer bridging claim holds for all three.README only, no changeset.
