Hello,

With a lot of help from @MarcelKonrad to bootstrap this development, here is my proposition to solve #289

There was a step to update to Spring BOOT 3.5 and its dependencies before going to Spring Boot 4.
These commits could be squashed.

REST Assured support has been dropped from Spring Boot REST Docs between 4.0.0 milestones and GA so I deleted all of the related code.

I tested @antoinelochet 's Spring Boot 4 fork with some of my Spring Boot 4 apps and it works well for me.
But I just used the libs restdocs-api-spec and restdocs-api-spec-mockmvc.
