Add pprof-diff.sh and document gate benchstat/pprof comparisons in
BENCHMARKING.md. Raise bench-all default COUNT to 6 for benchstat.
BenchmarkSanitizeStaleUpmaps now uses sparse upmap fixtures (same
upmapCount as other benches); production sanitize code is unchanged.
