Summary
This PR brings support for Expo 55 in the expo config plugin. The entrypoint is updated: config plugin will now inflate a different file during CNG for pre-55 and post-55 Expo.
CI is updated appropriately.
Currently this PR is blocked - RN & hermes 0.83 are not yet published in Maven. It will be unblocked as RN 0.83 is published.
