chore(docker): migrate Kafka image from bitnami/kafka to bitnamilegacy/kafka

  • The original bitnami/kafka image is no longer maintained and has been removed from Docker Hub.
  • Update docker-compose and Dockerfiles to use bitnamilegacy/kafka instead.
  • Ensure compatibility with existing Kafka configurations and environment variables.
