fix: update Poetry installation to include 'perception'

Purpose

• Update the Poetry installation to include the 'perception' dependency.

Proposed Changes

This PR modifies the Poetry installation command to replace 'openset' with 'perception'.

Issues

• Refactor Dockerfile to use perception Poetry group instead of openset #725

Testing

• Tested the installation process to ensure all dependencies are correctly installed. Results were successful.
