Allow usage of UUIDs v1 to v8 in the 2.4.x branch

Allow validation of UUID v1 up to v8 for version 2.4.x.

I hope this is an acceptable change.

It's likely that we won't release 2.4 anymore. It is still available as 2.4.x-dev on packagist, and if accepted, your changes will be there, but we can't promise to keep that for much longer.

The 3.x branches support UUID v8, and we recommend using those if necessary. Let us know if there's any issues regarding those newer versions (perhaps PHP 8.5 support would be the greatest blocker for now, however, we strongly recommend people to migrate to it!).

To me, this is approved! I'll let it sit for one day so other @Respect/troubleshooters can take a look at it, and if no one objects I'll merge it.

@alganet : Due to the scope of refactoring needed, a migration to 3.x is on the table, but a bit further down the line, so it was easier to patch 2.4 to allow the newer UUID versions. Then I thought to make a pull request to see if was acceptable. I suspect there might be others in a similar situation as I am.

@GreenBattery indeed! We took a big risk deciding on 8.5, we know not everyone is able to upgrade yet. When people do, however, we'll be ready and battle-hardened for it.

We're monitoring the installs for 2.x which are still high, and we're not doing any new features there ourselves, but PRs are always welcome and the 2.x-dev package will be still up for a while.
