Update fork-of-fork example

Fork-of-fork continuation of #34.

Updates the example project to fix a few issues:

• Updates Gradle to 9.2.1, which now allows for people with their JAVA_HOME set to Java 25 to execute Gradle commands.
• Updates the Paper reference in gradle.properties to point to the latest fork example commit.
• Adds apiVersion to gradle.properties
• Updates the build.gradle.kts patch files to apply correctly again.
• Bumps the paperweight.paptcher plugin to 2.0.0-beta.19 and foojay-resolver-convention to 1.0.0.
