Adds a Nebius AI Studio quickstart to root, backend, and frontend READMEs and commented Nebius env hints to backend/env.example. This helps users run UDR with Nebius’ OpenAI-compatible API (e.g., model moonshotai/Kimi-K2-Instruct). No code changes, docs-only.
