chore: Update LICENSE copyright year to 2025

[Copilot]

Updates the MIT License copyright notice to reflect the current year (2025) as requested.

Changes Made

• Updated the copyright line in the LICENSE file from Copyright (c) 2021 Taplytics Inc. to Copyright (c) 2025 Taplytics Inc.
• All other content of the MIT License remains unchanged

This change ensures the license copyright notice is current and follows the format specified in the example reference from the DevCycleHQ-Sandbox/openfeature-mcp repository.
