- add forgejo application definition with metadata and logo
- add version 14.0.1 with standard docker configuration
- add version 14.0.1-rootless with rootless docker configuration

- remove separate `14.0.1-rootless` directory and its data.yml and docker-compose.yml files
- add `ROOTLESS` boolean configuration option to main `14.0.1/data.yml` for deployment mode selection
- update main `14.0.1/docker-compose.yml` to use dynamic `${IMAGE}` variable and adjust volume mounts for rootless compatibility
- add new `scripts/init.sh` to dynamically set the image tag and prepare rootless directories based on the `ROOTLESS` environment variable
- add new `scripts/upgrade.sh` to run the init script during upgrades
- amend environment variable prefix from `forgejo__database__` to `FORGEJO__database__`
