Update valibot to v1.2.0 and adjust dependencies

Bumped valibot from 1.1.0 to 1.2.0 in pnpm-lock.yaml and updated dependency overrides and snapshots to reflect the new version. Also updated transitive dependencies and peer dependencies for packages relying on valibot and related Sanity packages.
