added apolloClient option for passing a preconfigured client (#93)

* added apolloClient option for passing a preconfigured Apollo client to the plugin.

* dont setup link if apolloClient is used

* setup client via function

* added some guidance on configuring for AppSync

* context hug the apolloClient option

* added test for setting apolloClient
