Add progress handler

Hi!

I'd like to suggest adding support to progress notifications. This is mostly an aesthetic feature, but I find it useful to know when the LSP server is done indexing the project and is responsive to other queries.

To add a bit of context, I have configured the MATLAB language server in Neovim and I'd like to get LSP notifications through the Fidget plugin, which works out of the box for the other LSP servers I use.

While this isn't currently in our plan, we can consider this for a future update!
