refactor to be OpenAPI 3 compliant

Currently, we are waiting until OpenAPI 3+ is adopted by mayor services.

If anyone has good examples of APIs with OpenAPI v3+ descriptions I'd love to use them for testing.
From my research I found out it still isn't widely used and not many real word APIs have this description.

With that, I came to the conclusion to wait and sill support mainly Swagger (OpenAPI 2)
