Support for Jackson 3.x

We are currently using the library cloudevents-json-jackson:4.0.1 in our project, which depends on Jackson 2.x. As we are migrating to Jackson 3.x, we need this library to be compatible with the newer version.

Are there any plans to provide support for Jackson 3.x?

The changes in #704 contain the upgrade to Jackson 3 among other things. Hopefully we will see them merged soon.

Support for Jackson 2 is expected to be removed in SpringBoot 4.1/4.2
