docs: "Create Actor from template" pages diverged from current Apify Console UI

Summary

The documentation for creating an Actor from a template in Apify Console has diverged significantly from the current UI. This affects both Platform docs & Academy

Discovered using Claude Code + Playwright MCP to walk through the documented steps against the live Apify Console UI.

Root cause

The Apify Console UI has been redesigned with:

1. A new template selection flow with Git integration and template detail pages
2. Updated templates using Crawlee instead of Axios/Cheerio
3. Reorganized tab structure ("Source" as parent tab)
4. Updated button labels and input schemas

The documentation was not updated to reflect these changes.

Suggested fix

Both pages need a rewrite to match the current UI.
Validate changes using Claude Code + Playwright MCP.
