Support PHP 8.5

Suggestion

Add support for PHP 8.5: https://github.com/php/php-src/releases/tag/php-8.5.0

Docker images for 8.5 are released for bookworm and trixie. Trixie is the latest stable debian release, so this will the only one to be supported for 8.5.

Build fails as imap is no longer recommended to be used, and also no longer builds with trixie:

In PHP 8.4, the IMAP extension is no longer part of PHP Core, and has moved to PECL. The IMAP extension can still be installed from PECL, but given the known issues with the extension, it is recommended to move to an alternative library listed below.

Could create separate dockerfiles for this, but as I am basically the only consumer, I'll just remove the imap extension altogether.

Fixed in 8838ae6, however AMQP and GRPC will not compile on 8.5 yet:

• AMQP AMQP doesn't compile with PHP 8.5.0 php-amqp/php-amqp#600
• GRPC Support for PHP 8.5 grpc/grpc#40242
