Update Code of Conduct contacts and committee members

Context

The current Code of Conduct page (content/code-of-conduct/_index.md) contains:

• A named Chairperson with a personal phone number that may no longer be current
• A CoC committee list from 2025 that needs validation

Task

• Validate who the current Conference Chair is and update the CoC accordingly
• Validate the current CoC committee members (names and email addresses)
• Remove or replace the personal phone number with a safer contact method if needed
• Do not list individuals until confirmed

Do not make any changes until the correct contacts are confirmed by the organising team.
