v2.0.0

The releases of Cogstack Jupyter-Hub will be separate from the NiFi releases.
Up until v1.2.7 the images respected the same version number as the NiFi image releases.

To avoid confusion the new images will start from version v2.0.0, for the following reasons:

• separation from the master NiFi repo
• Jupyter hub/singleuser updated from version v4 to v5
• added ARM64 builds (currently usable but may be unstable in future releases, NOT TESTED IN PRODUCTION)
• new repo structure, with attributed env and docker files
