Add more notebooks to CircleCI execution

@troyraen - after this is in, we can look into enabling back the execution of more of the notebooks on circleCI, using the assumption that if only a subset of notebooks are executed they would fare better with resources.

One way to do it would be to open a PR with some dummy commit; then restart circleCI with ssh -- log into SSH and then one by one enable the notebooks and check which one fails with the resource issue (it won't build and the log will end with some non-informative myst version printouts).
