Add pause and save process

I've been using the tool lately and really like it, the only problem I have now is that for some use cases the processing time could be up to >3hrs, where I cant have my machine on cause reasons and have to stop and lose process.

Can you set the start/end time to process the video in chunks instead of all at once? If so, you can set that via the UI as a workaround for now. I'm happy to consider this, but I think this would be a significant undertaking to implement. Specifically, resuming the process by storing breadcrumbs on disk to know where we were, and restoring the program state exactly as it was, is non-trivial for the scan engine. If you are keen, feel free to file a feature request for it. I don't think we can fully stop the scan engine.

That being said, we can easily add a "Pause" functionality if it helps. In this case, you could still allow your computer to go to sleep mode, which will allow you to resume scanning again when you wake up the machine.
